But NOT as cold as back home in Midlothian!!! They are expecting more snow and temps in the 20s midweek. We are glad to be here in Gulf Shores! Today the high will be the upper 50s. Then we'll have a few days of colder weather but climbing again as the weekend arrives.
We had an interesting day yesterday. The convection microwave finally gave up the ghost...expired! It's behavior reminded me of a microwave we had early on called Chernóbil! We passed that on on to Jonas Beals who I believe replaced it soon after getting it....a good idea
Cooking without an oven is a challenge but I found a way to make a meatloaf in the slow cooker! It turned out great and we will have that tonight...maybe meatloaf sandwiches. We can still cook on the stove or outside on the grill as well as using our electric slow cooker/pressure cooker/air fryer.
We watched the Daytona 500 yesterday. One of my former students is now crew chief for Bubba Wallace...a promotion for him from the truck series to the main event. While I know I had nothing to do with his success, I feel like a proud ex-teacher anyway!
While watching the race I also worked on finding reservations for 6 people going to Ireland in late Sept through mid October. With the help of the other couples we have our flights booked, and almost all of our stays booked as well.....maybe all by the time you read this.
This morning Jim decided to take out the microwave, which became a major production! There were screws holding in it place in places we could not see. Needless to say, Jim was determined to win the battle and he finally did! It is out! We have to figure out how to dispose of it but that's a problem for tomorrow since today is a holiday.
